Spinach is good for all, especially kids and babies. Spinach has a high concentration of iron, which is important for children’s development. When shopping for this recipe, best is to go for baby spinach, because it has more nutrients in it. The dish contains many other healthy and nutritious ingredients, so read and start cooking. Ingredients for 6 servings:
2 teaspoons extra-virgin olive oil
¼ cup chopped yellow onion
2 cloves garlic, minced
6 cups fresh baby spinach
4 ounces cream cheese
¹⁄8 teaspoon salt
Pinch of ground black pepper
Pinch of ground nutmeg (optional)
- Use a nonstick skillet, the oil must be heated on medium. Add the onion and cook until translucent.
- Then add in the garlic and spinach. Cook them about 3 minutes, or until the spinach is just wilted.
- You don’t want to burn the cheese so reduce heat to low. Add the cream cheese, salt, pepper, and nutmeg, and cook until heated through, about 2 minutes. Serve immediately. If you have any leftovers you can refrigerate them for up to 2 days.
